Jorge had a vision of a dining experience that combined his family’s culinary legacy with the unique culture and style of Brisbane, and as a result, Phatboys was born. Founded in 2015, this unique food truck blends down home Portuguese recipes and local Brisbane ingredients (when available) to create a truly one of a kind meal. Jorge picked up countless culinary skills from his time working at ARIA Brisbane, Ribs and Rumps, and Caxton Street Catering, and he uses each of these experiences combined with his travels to inspire Phatboy’s flavorful menu. He pays particular attention to the freshness and quality of the locally sourced ingredients, ensuring that each bite is better than the last.
